If I decide I'd like to use these styles for all new documents, one of the Options in the style drop-down is to set these as my default styles. Select the style set you want from the gallery, or create a new one, and then click the Set As Default button on the Design tab: Click Yes in the prompt to apply that style set to the Normal.dotm template as it says, the settings will be applied to all new blank documents. After you choose a font, your new documents will use this font unless you change it again.

To be fair, the outline panel can pick up the structure if you start changing the font size for headings, like this but that’s not going to be a help to other tools that need to identify structure correctly in order to work and will not help produce accessible documents. With the text still highlighted, click Format Paragraph styles Options Save as my default styles.
